Mushrooms 101

I don't know many kids who like mushrooms. It must be an acquired taste. It wasn't my favorite food growing up but now I love them on pizza and in salads & soups. I've been watching a lot of cooking shows lately and have discovered that there are all kinds of mushrooms; not just those white button 'shrooms you buy in black plastic containers covered with plastic wrap.

Wild edible mushrooms include:

Boletus edulus, also known as the "pig mushroom," "white mushroom" or "wolf mushroom."

Hericium erinaceus is a tooth fungus known as the "lion's mane mushroom."

Matsutake is the "Brad Pitt" of Japanese mushrooms (a culinary star).

And let's not forget "Caesar's mushroom," "giant puffball," "gypsy mushroom," "mild milkcap" and "Dryad's saddle."
